    Here’s a simple way to make plain white rice feel a little more exciting! This is my Spring Onion Butter Rice; incredibly simple, but packed with flavour. It’s the kind of side dish that works with almost anything. Serve it alongside crispy chicken, grilled salmon, steak or fried eggs, or eat it straight from the bowl on its own. Best of all, it comes together in just 15 minutes with ingredients you likely already have at home.

    • Unsalted butter – Using unsalted butter allows you to control the saltiness of the final dish.
    • Spring onions – also known as green onions.
    • Salt – flaky sea salt is my preference here.

    • Medium saucepan – Ideal if you prefer cooking rice using the absorption method on the stove.
    • Rice paddle – Helps gently fold the butter and spring onions through the rice without crushing the grains.

    How to Make Spring Onion Butter Rice

    Step 1: Rinse the short grain rice under cold water until the water runs mostly clear. Cook the rice using your preferred method. I use the absorption method on the stove, but a rice cooker works perfectly too.

    Step 2: While the rice is still hot, add the cubed butter, chopped spring onions and salt directly into the pot or bowl.

    Step 3: Gently fold everything together until the butter has fully melted and coated the rice evenly.

    Step 4: Serve warm alongside your favourite protein, vegetables or fried eggs.
