- Water
- Unsalted butter – Using unsalted butter allows you to control the saltiness of the final dish.
- Spring onions – also known as green onions.
- Salt – flaky sea salt is my preference here.
Equipment You’ll Need
You don’t need much to make this recipe, but having a few reliable kitchen staples makes the process even easier.
- Kitchen scale – Perfect for weighing all of the ingredients. Also a general kitchen essential!
- Rice cooker – The easiest way to get perfectly fluffy rice every time with minimal effort.
- Medium saucepan – Ideal if you prefer cooking rice using the absorption method on the stove.

How to Make Spring Onion Butter Rice
Step 1: Rinse the short grain rice under cold water until the water runs mostly clear. Cook the rice using your preferred method. I use the absorption method on the stove, but a rice cooker works perfectly too.
Step 2: While the rice is still hot, add the cubed butter, chopped spring onions and salt directly into the pot or bowl.

Step 3: Gently fold everything together until the butter has fully melted and coated the rice evenly.
Step 4: Serve warm alongside your favourite protein, vegetables or fried eggs.
Tips for Making the Best Spring Onion Butter Rice
- Use freshly cooked rice – The butter melts best into hot rice, helping coat every grain evenly.
- Rinse the rice before cooking – This removes excess starch and helps create a fluffier texture.
- Finely chop the spring onions – Smaller pieces distribute more evenly throughout the rice and give you flavour in every bite.
- Season while the rice is hot – The salt dissolves more evenly and the butter incorporates much better while everything is warm.
- Serve immediately – This rice is best enjoyed fresh while warm, buttery and fluffy.
Variations & Additions
One of the best things about this Spring Onion Butter Rice is how easy it is to customise. Here are a few simple ways to switch it up depending on what you have at home.
- Add minced garlic – Stir through freshly minced garlic while the rice is still hot for extra savoury flavour.
- Add fresh chilli – Finely chopped red chilli adds heat and freshness that works beautifully with the buttery rice.
- Swap some of the butter for chilli oil or chilli crisp – Try using half butter and half chilli oil or chilli crisp for a spicy, savoury twist.
- Top with a fried egg – The runny yolk mixed through the buttery rice is unbelievably good!
- Add sesame seeds or furikake – For extra texture and umami flavour.
- Turn it into a meal – Serve with crispy chicken, grilled salmon, steak, tofu or soft boiled eggs for an easy lunch or dinner.
