Spring Onion Butter Rice

- 185 g (1 cup) short grain rice rinsed
- 310 mL (1¼ cups) water
- 40 g unsalted butter cubed
- 3 spring onions finely chopped
- 1 teaspoon salt
Rinse the short grain rice under cold water until the water runs mostly clear.
Add the rice and water to a saucepan and cook using the absorption method, or cook the rice using your preferred method or rice cooker.
Once cooked, while the rice is still hot, add the cubed butter, chopped spring onions and salt.
Gently fold everything together until the butter has fully melted and evenly coated the rice.
Serve warm alongside your favourite protein, fried eggs or vegetables.
- Short grain rice works best for this recipe as it gives the rice a soft, fluffy texture.
- This recipe is best served fresh while warm and buttery.
- Try adding minced garlic, chilli oil or chilli crisp for extra flavour.
- A rice cooker works perfectly for this recipe if preferred.
