Amp up your toasted sandwich game by getting a little creative with those fillings. If you're like me, a toastie is one of my go-to lunch options (an occasionally a dinner option too), especially if I'm feeling lazy. If you can't be bothered with a fancy meal or are short on time, what better meal than crunchy bread with an oozy filling.
I'm all about grilled cheese. The classic cheddar cheese melted into slices of white bread is a dish like no other, but sometimes it can be a bit bland, you know? So how about we dance with the idea of putting a cheese other than the yellow block on our toastie. In steps brie.

This turkey, brie and cranberry toastie is as simple as it gets in terms of recipes. To be honest, the skill of a toasted sandwich lies in the filling. If you are short on brie, you could substitute with regular cheese for a similar effect, but I highly recommend you invest in the good stuff. Turkey has a subtle flavour and works well when put with the sweetness of cranberry sauce, the creamy brie and little bit of greenery.
Turkey Brie and Cranberry Toastie
Ingredients
- 2 teaspoon Butter or margarine
- 4 slices thick sourdough bread
- 4 slices turkey breast
- 2 tablespoon cranberry sauce
- 125 g brie cheese sliced
- 1 cup baby spinach leaves
Instructions
- Spread the butter or margarine on to the outsides of the slices of bread. This side will go face down in the pan when we cook our toastie.
- Layer brie cheese, cranberry sauce, turkey and spinach leaves, and top with remaining slice of sourdough. Keep the brie close to one side of the sandwich.
- Heat a fry pan over a medium heat. Place sandwiches butter side down on to the pan - the side that has the brie layered first. Press down with a metal spatula, or the lid of the frypan.
- Fry sandwich for 3-5 minutes or until golden, flip and repeat on the other side until golden and the brie is oozy. Serve immediately.
