How has your 2018 been so far? As I said last time, it is still flying by for me - I think this is what our parents meant when they said 'where does the time go?'
Having recently changed jobs, and moving into a role that has a more permanent office space, I find that I've drinking about five extra cups of tea per day and getting more into a rhythm of snacking - which I'm okay with. Snacks vary from fruit, to hot cross buns (Easter), to a cookie here and there (classic office snacks), but I've been more and more motivated to bring my own baked goods from home to enjoy. By doing this, I feel like I can control what goes in to them, and the portion size as well; always a bonus for making your meals at home.
Not too long ago I bought a book called Baking with Vegetables which included some delicious looking sweet recipes that each included one or more vegetables. When we think about veggies, our minds go straight to savoury, but if you've tried carrot cake, you'll know that vegetables can have a starring role in many a sweet dish. With this recipe - don't be deterred by the addition of cacao/cocoa, because trust me, it works well. We're all guilty of forgetting to include anywhere near enough vegetables in our diet, so do yourself a favour and throw them into your snacks/dessert as well.
These mini loaves are the perfect size to throw into your lunchbox for a sweet treat mid-afternoon. Sweetened with my go-to, Natvia, of course.

Ingredients
- 2 cups self raising flour
- ¾ cup Natvia Natural Sweetener
- ½ cup cacao powder (or Dutch cocoa powder)
- 1 large zucchini (, grated)
- 150 g unsalted butter (, melted)
- 1 tsp vanilla extract
- 3 eggs (, lightly whisked)
Instructions
- Preheat oven to 180ºC. In a bowl, combine flour, sweetener, cacao powder and zucchini.
- In a separate bowl, whisk together melted butter, eggs and vanilla. Add wet ingredients to dry ingredients.
- Spoon mixture into eight prepared mini loaf moulds. Bake for 20 minutes, or until a skewer comes out clean. Allow to cool before eating.
