Mini Zucchini Cacao Loaves

Ingredients

  • 2 cups self raising flour
  • 3/4 cup Natvia Natural Sweetener
  • 1/2 cup cacao powder (or Dutch cocoa powder)
  • 1 large zucchini (, grated)
  • 150 g unsalted butter (, melted)
  • 1 tsp vanilla extract
  • 3 eggs (, lightly whisked)

Instructions

  1. Preheat oven to 180ºC. In a bowl, combine flour, sweetener, cacao powder and zucchini.
  2. In a separate bowl, whisk together melted butter, eggs and vanilla. Add wet ingredients to dry ingredients.
  3. Spoon mixture into eight prepared mini loaf moulds. Bake for 20 minutes, or until a skewer comes out clean. Allow to cool before eating.
