Elevate your otherwise boring lunch with this creamy pesto chicken salad on a chewy bagel.
I can't recall how many times I've searched high and low in my fridge or pantry for ingredients to whip together for lunch. Or the times I don't make extra dinner the night before, and then I'm caught out the follow work day, forced to run down to the grocery store to buy a salad.
Lunches become monotonous after a while, when all you're doing is rotating the same old recipes day in and day out. For me, the way around this is usually to make enough leftovers from dinner to take the following day so I don't have to think at all. Zero extra effort suits me just fine.
The other day, when unwrapping a platter of sandwiches for a work lunch my office was hosting, I realised - I love sandwiches. When I was in school, my mother used to create what could be described as culinary sandwich masterpieces for myself and my sister to take to lunch each day. She creatively layered different types of meats, salads, cheeses and chutneys in unique combinations five days a week for most of my schooling life. To say I was disappointed when she told me I was old enough to make my own lunch is probably an understatement.
Anyway, sandwiches are great. They hold all the delicious things in between two slices of bread, and for something a little wild, a crunchy bread roll or chewy bagel. Make the filling to this bagel a day in advance and load up your bagel the morning of. Happy lunching.
Creamy Pesto Chicken Bagel
Ingredients
- 1 large chicken breast , poached and cooled
- ⅓ cup low fat creamed cottage cheese
- 1.5 tablespoon basil pesto
- 2 tablespoon finely grated parmesan cheese
- Salt and pepper , to taste
- 4 bagels , toasted and sliced in half
- Sliced tomato
- Handful of rocket leaves
Instructions
- Take two forks to the cooked and cooled chicken breast and shred. Place into a bowl.
- Add cottage cheese, pesto, parmesan cheese and salt and pepper. Stir to combine.
- On your toasted bagel, layer rocket leaves, creamy pesto chicken and sliced tomato. Serve straight away.
