Ingredients
- Butter
- Brown sugar
- Castor Sugar
- Egg yolk
- Vanilla extract
- All purpose flour
- Baking powder
- Salt
- Freeze dried strawberries
- White chocolate

Tips and variations
- Fruit: Any freeze dried fruit would work in this recipe, but do not swap it for fresh or frozen fruit. You can also omit the freeze dried fruit, and add in an additional 25g of chocolate.
- Baking: I find that this cookie doesn't spread too far on the tray while baking, so pressing it into a thick disc is necessary, as opposed to leaving it as a ball of cookie dough.
- Increasing quantities: I wouldn't recommend using this recipe to create a batch of cookies, instead, refer to quantities in this recipe here.

Strawberry and White Chocolate Cookie for Two
Ingredients
- 50 g unsalted butter melted
- 2 tablespoon brown sugar (26g)
- 1 tablespoon castor sugar (18g)
- 1 egg yolk
- ½ teaspoon vanilla extract
- ½ cup all purpose flour (77g)
- ⅛ teaspoon baking soda
- ½ teaspoon salt
- 15 g freeze dried strawberries roughly chopped
- 50 g white chocolate roughly chopped
Instructions
- Preheat oven to 180ºC. Line a baking tray with paper
- Add butter and sugars to a bowl and whisk to combine. Add egg yolk and vanilla paste and mix in.
- Add flour, salt and baking soda, mixing until combined and a dough is formed. Add white chocolate and freeze dried strawberries and fold through gently.
- If the dough is quite soft, place into the freeze for 10 minutes to firm up. Mould into a ball shape and press on to your baking tray, flattening into a thick disc.
- Bake for 10 minutes. Remove from the oven and allow to cook before splitting in half with your loved one.
