As always with this time of year in Australia, the mercury continues to rise despite our animated protests. Long, hot days require ice cold drinks. There's nothing quite like a cool and invigorating beverage to beat the heat. Enter Basil Lime Soda, a concoction that brings together the cooling properties of basil and the citrusy punch of lime. Homemade cordials and syrups
This recipe starts with a homemade syrup. A classic 1:1 simple syrup, with lime juice and basil leaves. Experimenting with flavours allows you to tailor your beverages to your taste preferences and keeps things interesting when you've got guests to entertain.

At the time of writing this post, I am six months pregnant, and so well into non-alcoholic alternatives. Outside of my pregnant bubble, in recent years there has been a noticeable shift in beverage preferences, with the consumption of alcohol on a gradual decline.

As a result, the demand for non-alcoholic options is on the rise. People are seeking delicious alternatives that provide the same level of enjoyment without the intoxicating effects.

Tips and variations
- Citrus: swap the lime juice and zest for lemon, or another tangy citrus like kumquat or calamansi.
- Herbs: swap the basil for mint, thyme or tarragon. You could even try a woodier herb like sage, something similar to my salted sage lemonade.
- Sparkling water: swap for any club soda, or even a flavoured sparkling water. Lime infused soda water would work wonderfully with this recipe!

Basil Lime Soda
Ingredients
- 200 g castor sugar
- 200 mL lime juice (roughly 8 limes)
- 1 cup basil leaves plus extra to garnish
- Zest from 1 lime
- Sparkling water
- Lime slices for garnish
Instructions
- Add sugar and 100mL of water to a sauce pan over low heat. Stir until the sugar dissolves, and then remove from heat. Add basil leaves, lime juice and lime zest and set aside to cool completely.
- Once cooled, run through a fine mesh strainer to remove zest and basil. Pour into an airtight bottle for storage and keep in the fridge until ready to use.
- To make Basil Lime Soda, use the ratio of 1 part syrup to 4 parts sparkling water. Add ice to a large serving jug, pour in syrup and sparkling water, add ice and extra slices of lime and fresh basil leaves for garnish.
