    Thyme Tonic Rickey

    The Thyme Tonic Rickey is a slightly sweet, herbaceous, alcohol free drink that you can sip for any occasion.

    We’re in July already – where has the first half of the year gone?! This month, in Australia at least, many participate in what we call Dry July. As you’d expect, Dry July is a fundraising campaign that encourages individuals to give up alcohol for the entire month of July. The campaign originated in Australia in 2008 and has since gained popularity in several other countries. The primary goal of Dry July is to raise funds to support people affected by cancer, including patients, their families, and caregivers. Outside of the fundraising aspect, many choose to give up alcohol in July as a bit of a personal challenge.

    The rise of the zero proof drink

    Alcohol-free cocktails, mocktails, zero proof drinks. Whatever you call them, they have gained considerable popularity in recent years as an alternative to traditional alcoholic beverages. We’re seeing a lot more alcohol free spirits and mixed drinks available as off the shelf options, which is great to see. Bartenders and brands are flexing their creative muscles and creating drinks that include all the flavour, visual appeal and social enjoyment of the cocktails, without the alcohol. And I’m here for it!

    With that in mind, today we’re making a Thyme Tonic Rickey. This is my own little tweak on an original recipe by Camille Wilson of The Cocktail Snob. The drink itself is a riff on the Rickey: a combination of either gin or bourbon, lime and soda. The original drink doesn’t contain any sugar, but Camille adds half a shot in her recipe to give a little extra body and subtle sweetness. I’ve swapped this for a thyme simple syrup which I believe adds an additional herbaceous note.

    Thyme Tonic Rickey

    The Thyme Tonic Rickey is a slightly sweet, herbaceous, alcohol free drink that you can sip for any occasion.

    Ingredients

    • 15 mL lime juice freshly squeezed
    • 15 mL thyme syrup
    • 45 mL tonic water
    • 45 mL soda water
    • 3 dashes Angostura bitters
    • Sprig of thyme to garnish

    Instructions

    • In a rocks glass filled with ice, add the lime juice and thyme syrup and stir to combine.
    • Slowly stir in the tonic water and soda.
    • Top with the bitters. Garnish with a sprig of thyme and serve.
