Tuna puffs are an easy to make snack perfect for making with your family. Eat them hot or cold, take them to picnics or put them in lunchboxes!
It's a weird time we're all in right now and words cannot explain how difficult it is to comprehend the impact of COVID-19. I am very lucky and have the opportunity to work from home for my day job for the forseeable future. However my heart goes out to all of the people whose businesses, workforce and wellbeing has been significantly impacted by this event. It is hitting close to home for me, with members of my family impacted by the announcment of shut downs and closures of venues. It feels odd even addressing this and I hope we are able to soon look back on this time as a reflection of how we pulled together and stood as one.
Right now, staying at home and social isolating is something we can all do to support one another. During a time of unease, focusing on your personal wellbeing and that of those around you is important. While we're not going to be seeing each other in person, keeping in regular contact with family, friends and colleagues through digital platforms can help us feel connected.
For me, I've been focusing on cooking, of course, so I've been trying to keep my food quite simple by using basic ingredients that we have in the pantry. Right now I have a good stock of:
- Tinned legumes
- Pasta
- Rice
- Tinned tomatoes and tomato sauces
- Frozen vegetables
- Tinned fish
I think most people are in the same boat and since we're limiting how often we leave the house, keeping your food as interesting as possible is key to not getting food fatigue. I'm going to introduce a number of recipes on here that are dead easy to make and utilise some of the most basic ingredients we have access to. So let me present to you, tuna puffs. A great option for snacks, a light lunch alongside a salad or for children. They use a minimal number of ingredients, with little preparation required. This recipe yields 50 puffs and let me tell you, they taste even better when they are cold!
