    Tomato Egg Stir Fry

    This homely tomato egg stir fry is an easy, nutritious supper on the table in 10 minutes or less.

    It's a great feeling when you can make dinner with what's already available in your fridge and pantry. I make tomato egg stir fry regularly, purely because these ingredients are always stocked in my kitchen. As someone that regularly makes Chinese food, ingredients like oyster sauce and shaoxing wine are products I use every other day and feature often in many Chinese and Cantonese recipes. If you need to purchase these especially for this recipe, you can be sure to use them in a variety of other Asian dishes.

    There are many ways to make this Chinese dish, and that's the beauty of it. You can make it based on your own taste preferences. This is how I enjoy it. I love jammy tomatoes and soft, barely-cooked eggs that I can mix through hot steamed white rice. If texturally you prefer firmer eggs, scramble them first and remove them from the pan before cooking the tomatoes. Then add the eggs back in at the end. You can enjoy tomato egg stir fry as a side dish, or keep it as the main affair. It's a comforting bowl of goodness guaranteed to hit the spot when you've had a busy day.

    Tomato Egg Stir Fry

    This homely tomato egg stir fry is an easy, nutritious supper on the table in 10 minutes or less.

    Ingredients

    • 1 tablespoon neutral oil
    • 1 cm ginger cut into thin matchsticks
    • 1 teaspoon chilli flakes
    • 2 tomatoes cut into wedges
    • 2 spring onions cut into 3cm pieces (plus extra to serve)
    • ½ tablespoon oyster sauce
    • 1 tablespoon tomato sauce
    • ½ teaspoon salt
    • 2 eggs
    • ½ teaspoon sesame oil
    • 1 teaspoon shaoxing wine
    • ⅛ teaspoon white pepper
    • Steamed white rice to serve

    Instructions

    • Heat oil in a wok or fry pan, add ginger and chilli flakes and saute for a few minutes.
    • Add tomatoes and spring onion. Cook for 2-3 minutes, until tomatoes begin to break down. Add oyster sauce, tomato sauce and salt, and stir.
    • In a small bowl, whisk together eggs with sesame oil, white pepper and shaoxing wine. Pour over tomatoes. Let sit for a minute or two before stirring. Cook eggs to your preferred level of doneness.
    • Serve tomato egg stir fry with hot steamed white rice and sprinkle with extra sliced spring onions to serve.
