A tropical spin on the cocktail classic, what better way to ride out iso than with spicy pineapple margaritas.
It's hump day, Wednesday, so naturally an after hours (or, afternoon) beverage is more socially acceptable in comparison to Monday drinking.
Just kidding, do what you want. We're all still in isolation and behind closed doors so who cares. I've been a little more experimental with my drinking habits of late. I'm partial to a glass of wine, but recently I've been searching for something more exciting and fun. It's likely that this is to replace the slightly more socially active lifestyle I used to have prior to 10 weeks in quarantine.
A couple of months ago Mary Valley Food Co sent me a jar of wonderful dehydrated pineapple slices. They taste like naturally sweet little rollups - if you remember those? Kind of like a fruit leather almost, but chewier and more textural. Absolutely delicious. They look like these lovely yellow flowers almost, so naturally I wanted to use them in a recipe that had them front and centre.
I can't say tequila is anywhere near my alcohol of choice, but I've always been partial to a margarita. The flavour combination is so refreshing, much like a holiday in a glass. So I thought, lets complicate things a little more an attempt a spicy pineapple version. The results were great, but I've tested the recipe another two... maybe three times? Just to be sure. Enjoy.

Ingredients
Salted rim
- 2 tablespoon fine salt
- 1 teaspoon chilli flakes
Cocktail
- 30 mL blanco tequila
- 30 mL Cointreau or triple sec
- 15 mL lemon juice
- 60 mL pineapple juice
- ¼ teaspoon dried chilli flakes
- Dehydrated pineapple slice for garnish
Instructions
- Prepare your glass by running a slice of lemon along the rim and then dipping into a combination of salt and chilli flakes. Fill the glass with ice.
- To make the cocktail, add tequila, orange liqueur, lemon juice, pineapple juice and chilli flakes to a cocktail shaker. Add ice and shake to chill, about 15 seconds.
- Strain into prepared glass. Top with dehydrated pineapple slice to serve.
