If ever I my thoughts drift on to waffles, they think about those dessert-esque, crunchy-crusted hashtags topped with maple syrup and ice cream. For me, waffles are like the uptown version of pancakes (nothing against the wonderful pancake of course), only because they require an appliance to make. An appliance that most people don't own, because like me, they purchase in favour of the necessities, like toasters, blenders and stand mixers. We all have a limited kitchen space dedicated to the plug in appliance, and mine is particularly small.
I never thought I needed a waffle maker to be a part of my collection until right now. My sister made Belgium waffles at my house a couple of weeks ago and accidentally left her maker here. So recently I have started experimenting with some savoury ideas, and here we are at the potato and cheddar waffle.
My most frequently made dishes follow a similar pattern; must be able to be created in 30 minutes or less, at least 50% of the ingredients must already live in my pantry or fridge and the dish must be tasty (naturally). This recipe ticks all those boxes. In fact, the only ingredient I don't often have readily available is the garlic powder - which you could easily omit, or substitute for real garlic.
Waffles are a crowd favourite - no arguments there. Impress your friends and family with this little savoury number. Or alternatively, eat them all yourself and then nap on the couch like I did. May your thoughts and dreams be filled with waffles.

Ingredients
- 500 g grated potato ((approximately 2 medium potatoes))
- ¾ cup grated cheddar cheese
- ⅓ cup spring onion (, finely sliced)
- 1 tsp garlic powder
- ¼ tsp cayenne pepper
- 1 egg
- 1.5 tbsp all-purpose flour
- Salt and pepper to taste
Instructions
- In a large bowl, combine all ingredients. Waffle mixture should be sticky, but not too wet.
- Preheat your waffle maker. Scoop a quarter of the potato mixture on each plate. Cook waffle for 5-8 minutes or until golden and crispy.
- Serve with a fried egg and sliced avocado for a delicious breakfast, brunch or lunch!
