This lillet spritz is fruity and floral - the perfect drink to welcome the change of season from winter to spring.
The early weeks of spring are some of the best of the year in my opinion. I love the cold, but the combination of crisp mornings and the warmth of the sun on your skin is perfection. We only have a few short weeks before that lovable sunshine becomes the burning heat that we, as Australians are familiar with. So I'm all for soaking up the early days of the season, sitting outside and sipping on something refreshing. In steps the lillet spritz.
I first bought a bottle of Lillet Blanc when I was making the vesper - a drink from James Bond's Casino Royale. With almost a full bottle in my fridge, I was eager to use this apertif in other cocktails. Lillet Blanc is made from sauvignon and semillon grapes. It's a semi-sweet drink with floral, citrus and honey notes. Simply delicious.
The spritz is a refreshing way to enjoy this apertif, accompanied with lemon juice and a fragrant honey syrup. It is light and very drinkable, a delicious tipple with cheese and olives at a picnic with friends and family.

Lillet Spritz
Ingredients
- 90 mL Lillet Blanc
- 15 mL lemon juice
- 15 mL honey syrup recipe below
- 90 mL prosecco
- 30 mL soda
- Lemon twist & thyme to garnish
Honey syrup
- 1 c honey
- 1 c boiling water
Instructions
- To make the honey syrup, stir together honey and boiling water until completely dissolved. Set aside to cool completely before using.
- To make the lillet spritz, fill a wine glass with ice. pour over Lillet Blanc, lemon juice and honey syrup.
- Top with prosecco and soda and give your drink a stir.
- Garnish with a lemon twist and sprig of thyme.
