The Gold Rush is an easy, three ingredient cocktail combining the caramel toffee notes of bourbon with fragrant honey and lemon.
The Gold Rush was created at the famous New York bar Milk & Honey by bartender T.J Siegal. A take on the whisky sour, it's a simple cocktail that quickly became the bar's breakout success. It's a take on the whisky sour, instead replacing the sugar syrup with honey syrup. The result is a simple to make, easy to drink, contemporary classic.
Making cocktails can be an expensive hobby. Recipes can become lengthy and complicated, requiring two or three spirits, plus a selection of ingredients from the fridge and pantry. So personally, I love coming across a three ingredient drink. Particularly one that uses a single spirit. The flavours of the Gold Rush are clear and balanced. The drink is light, refreshing and delicious. A definite winner.
Some notes with this one: due to the simplicity of the drink I feel it is essential to use quality ingredients. My bourbon of choice is the Woodford Reserve. In terms of honey, again something local and high quality. The honey is very forward in this cocktail, so if you use something cheap, it really comes through. For lemon juice, freshly squeezed is a must.
Make your own honey syrup by combining three parts honey to one part warm water and whisk (or shake) to achieve the right consistency. The ratio of honey to water means that your syrup will still have viscosity, which adds to the overall texture and mouthfeel of the cocktail.

Gold Rush
Ingredients
- 60 mL bourbon
- 22.5 mL lemon juice
- 22.5 mL honey syrup 3:1 honey and water
- Lemon twist to garnish
Instructions
- In the base of a cocktail shaker add bourbon, lemon juice and honey syrup.
- Add ice and shake to chill.
- Strain into a rocks glass filled with ice. Garnish with lemon zest.
Notes
Honey Syrup
- Combine 3 parts honey and 1 part warm water in a jar. Shake to combine.
