    Breakfast sandwich

    Toasted brioche bread, egg, cheese, avocado and tomato - the breakfast sandwich is a satisfying way to start your morning.

    Admittedly, I'm not always the most consistent breakfast eater. I follow a more intuitive diet style and there are many mornings where I'm simply not hungry. Lately, however, I've been relishing in the routine of sitting down at my table for breakfast, with my hot cup of coffee and book. Slow starts to the day, sitting in the sunshine, have rapidly become my favourite time.

    I rotate my breakfast meal, as I get bored quickly with eating the same thing. One dish I've turned to a number of times over the past month is this breakfast sandwich. Toasted slices of thick cut toast, brioche or otherwise. A simple omelette with dots of chives throughout, filled with gooey melted cheese. Sliced tomato for freshness, avocado for the butteriness and caramelised onion jam for sweetness. The perfect bite, as you can imagine!!!

    One could argue that this should be a no-recipe recipe. You probably don't need someone telling you how to make a sandwich for breakfast right? It's pretty self explanatory. This combination though, and the act of wrapping the cheese snuggly in the chive omelette is my favourite part. Many breakfast sandwich recipes out there feature bacon, and while I'm a big fan of bacon at breakfast time, I found that the chewiness ruins the perfect bite. Here are the parts that you could experiment with:

    • Swap brioche for regular white bread or sourdough.
    • Swap caramelised onion jam for your favourite chutney. I've tried a spicy tomato jam as well, and it was perfect.
    • I'm a self confessed lover of the yellow, plastic looking American cheese, but by all means swap it for a slice or grating of vintage cheddar.
    • Add cream instead of milk to your eggs (honestly, my preference).

    Ingredients

    • 2 slices brioche bread
    • 2 eggs
    • 2 tablespoon milk or cream
    • 2 tablespoon chives chopped
    • Spray oil
    • 1 slice of cheese
    • 1 tablespoon caramelised onion jam
    • ¼ avocado
    • ½ tomato sliced
    • Salt and pepper to taste

    Instructions

    • Crack eggs into a jug and add milk and chives. Whisk thoroughly.
    • Plan a non-stick pan over medium heat. Spray lightly with oil. Pour in whisked eggs and tilt the pan to create a thin layer across the base.
    • Turn the heat to low and allow egg to cook almost all the way through. Place cheese slice into the centre and fold all four sides over the top. Press down to create a neat egg square with the cheese encased inside.
    • Toast brioche. Once cooked, spread caramelised onion jam on one side and avocado on the other. Layer tomato sliced atop the avocado and place the egg omelette on the jam side. Don't forget to season your tomato!
    • Fold both sides of the sandwich together and slice through the centre creating two rectangles. Serve immediately.
