    Berry Coconut Bliss Balls

    At about 3pm in the afternoon, a large majority of us experience the slump. That familiar drop in energy levels increases our cravings for a pick-me-up snack and more often than not it is for something on the sweet side.

    The bliss ball needs no introduction - there are 1001 different recipes online and now I'm adding one more. I'm all for simplicity, and this berry coconut bliss ball recipe is one of the easiest I've made. It doesn't require scraping down the sides of your food processor every 30 seconds, or melting coconut oil in the microwave. You literally put everything into a mixer and blitz it up. I really like the freshness of berries in this snack. It gives the balls a pretty pink colour and a mild tanginess that cuts through the sweet.

    Considering these balls have fresh fruit and dried fruit in them, there is no need for additional sugar. So I substituted in a little sweetener to make them taste wonderful. If your berries are a little overripe, you can omit the sweetener easily enough. Go by your taste.

    Ingredients

    Scale
    • 250 g berries
    • 2 cups rolled oats
    • 1 cup shredded coconut
    • 2 tsp Natvia Natural Sweetener
    • 5 large medjool dates
    • Desiccated coconut for rolling

    Instructions

    1. In a food processor, combine all ingredients excluding the desiccated coconut. Blitz until a crumbly dough forms.
    2. Roll dough into 16 bite-sized balls and roll into desiccated coconut.
    3. Place in the freezer for 30-60 minutes to harden before serving. Store covered in the fridge for up to five days.

    • Fresh or frozen berries are suitable for this recipe
