Lemongrass and Ginger Iced Tea
A refreshing homemade drink made with lemongrass, ginger, and jasmine green tea. Lightly caffeinated, naturally aromatic, and perfect for serving over ice on warm days. Easy to make ahead and customisable with your choice of sweetener.

- 1.2 L water
- 100 g ginger peeled and sliced thickly
- 2 stalks lemongrass cut into thirds
- 4 bags of jasmine green tea
- 1 tablespoon honey or more, to taste
In a large saucepan, add 750mL of water. Using the side of a knife, gently smash the ginger and lemongrass until bruised slightly before adding to the pot of water.
Boil for 15 minutes. Add tea bags, and boil for an additional 5 minutes. Stir through honey to taste.
Pour tea into a large jug and top with remaining water to bring up to the 1.2 litres. Place in the fridge to chill completely - 4-6 hours or overnight. Serve over ice.
