To make the burger patties, season mince with salt and pepper and mix to combine. Divide into six portions and form into patties.
Spray olive oil over a grill pan or barbeque set to high heat. Add patties and cook for 3-4 minutes on one side before flipping.
Once flipped, add a slice of cheese to each patty. Cook for a further three minutes until cheese has melted. Remove from heat.
Slice bread rolls in half and place both halves, cut side down, on to grill or barbeque until toasty.
To make the sauce, whisk all ingredients together.
To assemble, place a spoonful of burger sauce on the bottom half of the burger bun. Top with lettuce, followed by beef patty with cheese, sliced tomato, red onion and pickles.
Add an additional spoonful of dressing to the top half of the burger bun and place on top. You're ready to serve!
