Turkey Brie and Cranberry Toastie
Amp up your toasted sandwich game with a filling that ticks all the boxes. Spice up your regular grilled cheese with this turkey, brie and cranberry combo.

- 2 teaspoon Butter or margarine
- 4 slices thick sourdough bread
- 4 slices turkey breast
- 2 tablespoon cranberry sauce
- 125 g brie cheese sliced
- 1 cup baby spinach leaves
Spread the butter or margarine on to the outsides of the slices of bread. This side will go face down in the pan when we cook our toastie.
Layer brie cheese, cranberry sauce, turkey and spinach leaves, and top with remaining slice of sourdough. Keep the brie close to one side of the sandwich.
Heat a fry pan over a medium heat. Place sandwiches butter side down on to the pan - the side that has the brie layered first. Press down with a metal spatula, or the lid of the frypan.
Fry sandwich for 3-5 minutes or until golden, flip and repeat on the other side until golden and the brie is oozy. Serve immediately.
