Turkey Brie and Cranberry Toastie

Amp up your toasted sandwich game with a filling that ticks all the boxes. Spice up your regular grilled cheese with this turkey, brie and cranberry combo.

Ingredients

  • 2 teaspoon Butter or margarine
  • 4 slices thick sourdough bread
  • 4 slices turkey breast
  • 2 tablespoon cranberry sauce
  • 125 g brie cheese sliced
  • 1 cup baby spinach leaves

Instructions

  • Spread the butter or margarine on to the outsides of the slices of bread. This side will go face down in the pan when we cook our toastie.
  • Layer brie cheese, cranberry sauce, turkey and spinach leaves, and top with remaining slice of sourdough. Keep the brie close to one side of the sandwich. 
  • Heat a fry pan over a medium heat. Place sandwiches butter side down on to the pan - the side that has the brie layered first. Press down with a metal spatula, or the lid of the frypan. 
  • Fry sandwich for 3-5 minutes or until golden, flip and repeat on the other side until golden and the brie is oozy. Serve immediately.
