Potato & Cheddar Waffles

Ingredients

  • 500 g grated potato ((approximately 2 medium potatoes))
  • 3/4 cup grated cheddar cheese
  • 1/3 cup spring onion (, finely sliced)
  • 1 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • 1 egg
  • 1.5 tbsp all-purpose flour
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine all ingredients. Waffle mixture should be sticky, but not too wet.
  2. Preheat your waffle maker. Scoop a quarter of the potato mixture on each plate. Cook waffle for 5-8 minutes or until golden and crispy.
  3. Serve with a fried egg and sliced avocado for a delicious breakfast, brunch or lunch!
