Apple and cinnamon muffins are here to save your rumbling stomach from influencing your brain to buy sugary canteen sweets, with its soft spongy texture and warm apple pieces. Combined with a hot cup of tea or coffee, morning tea can be your new favourite time of day. These are a breeze to make as well, so set aside a spare 45 minutes over the weekend for some baking and you’ll be ready for the week ahead.
Apple and Cinnamon Muffins
1 ½ cups self raising flour, sifted
50g butter, chopped into cubes
1/3 cup caster sugar
½ cup low fat milk
1 egg, lightly beaten
400g can pie apple, roughly chopped
2 tsp ground cinnamon
2 tbsp rolled oats
1 tbsp brown sugar

You can replace the butter with natural yoghurt if you wish, and add a bit of honey rather than the sugar to sweeten them up!
