We probably all need more vegetables in our life, and what better way to hide them than in a soup!
Even if you’re not the biggest fan of broccoli, you can’t deny that this dish is like a warm hug right inside your mouth. Pour it into a thermos and take it on your travels the following day for instant mouth hugs whenever you need.
You could probably substitute the broccoli with cauliflower and the cheddar with blue cheese…it would make an equally as interesting and tasty soup.
Broccoli and Cheddar Soup
1 large broccoli, cut into florets
2 cloves of garlic, minced
1 onion, chopped
3 cups vegetable stock
1 ½ cups sharp cheddar cheese, grated
Salt and pepper to taste
