Beef Ravioli


Surprisingly, pasta is quite simple to make, and brings a great deal of satisfaction. With all the cooking shows currently on television, you can’t help but wonder how much better homemade pasta tastes than all the packaged stuff.

You can buy ravioli with a variety of different fillings, but they’re generally quite processed and bland. Making your own gives you the freedom to experiment with different ingredients.

This recipe is for beef ravioli. It’s simple to make, full of flavour, and a sure way to impress friends and family. Team it with a basic sauce that doesn’t take away from the pasta itself, and dinner is done. You can also cook and chill this ravioli for use in a salad or similar.


Beef Ravioli
Serves 4

For the pasta:
2 ½ cups unbleached ‘00’ flour, plus more for dusting
Pinch of fine sea salt
4 eggs, room temperature
2 tsp olive oil

For the filling:
1 tbsp unsalted butter
1 small onion, finely diced
½ cup carrot, finely grated
½ cup celery, finely chopped
500g beef mince
½ cup red wine
2 eggs, lightly beaten
½ cup grated Parmesan cheese
½ cup fine breadcrumbs
Salt and pepper, to taste
