Spinach and Artichoke Mini Quiches


This whole process of ‘meal prep’ can sometimes get a little overwhelming, especially when you’re not that creative. I mean, who wants to eat baked chicken, rice and broccoli for seven days straight, three times a day? Not me. Soon, food fatigue takes toll, and you’ll probably grow sick of the eating the same thing over and over again.


Preparing your meals in advanced doesn’t have to be as boring as meat and three veg. Anything that can be kept in the fridge or freezer for an extended period of time is incredibly helpful if you live a busy lifestyle. Today, eating on the go has become more of a norm, but don’t think you need to sacrifice your nutrition just because you’re short on time.

These mini quiches are easy to prepare and short on cooking time. Realistically, you can throw in whatever ingredients you have in your fridge, and they will still taste fantastic.
