The rare occasion comes around where I don’t choose coffee and instead I go for the sweet, aromatic flavour of chai.
Unfortunately it isn’t all too pleasant to drink beverages over 65°C in our current season.
Try an Iced Chai Latte. People often back down from making their own brew because purchasing the mix from your local store is so simple. However, the full bodied flavour of chai is really captured when you brew your own and it is incredibly simple as well.
Iced Chai Latte
Makes approximately 750ml
3 cups water
1 piece (2cm) ginger, sliced
1 cinnamon stick or 1 tsp ground cinnamon
6 whole cardamom pods
4 whole black peppercorns
6 whole cloves
3 tsp honey
2 black teabags
1/4 cup milk
Place ginger, cinnamon, cardamom, peppercorns, cloves and water in a pot and bring to the boil. Reduce heat and simmer for 5 minutes. Place teabags in water and steep for 1 minute before removing. Add honey and milk and continue to simmer for a further 5 minutes. Remove from heat, strain out spices, allow to cool slightly before pouring over ice. Enjoy!
