The other day my incredibly healthy friend Angie was explaining her love for protein balls, all while we were doing wall sits up against the bar when we were supposed to be working.
Chocolate Protein Power Balls
Makes 12 balls
1/2 cup oats, whizzed to a fine grain
1/4 cup sunflower kernals, finally chopped
1/4 cup walnuts, finely chopped
1 tbsp chia seeds
1 scoop chocolate protein powder
15 dates, soaked in hot water for at least 30 minutes
1 tbsp peanut butter
1 tbsp coconut oil, melted
Cocoa powder or desiccated coconut for rolling
Combine oats, walnuts, sunflower seeds, chia seeds and protein powder in a large bowl. Drain water from dates and whiz to form a sticky paste. Throw into the bowl, along with the peanut butter and coconut oil. Using a spoon (or your hands), combine the dry ingredients with the wet till the mixture is a workable consistency. Roll into 12 balls and roll in cocoa powder to coat. Keep in the fridge or freezer.
These balls make for an absolutely delicious snack and are good for you too.0
