Gnocchi in Spinach Cream Sauce


Some days you just feel lazy, you know? It’s way to much effort to get up and cook a fancy meal for everyone when you just feel like hanging in your track pants and watching movies all day.

Gnocchi is so simple to cook. The little dumplings are basically already there, they just need a quick boil to heat and soften up. However if you feel like putting more time into this meal than I did, you can use any kind of pasta.

Gnocchi in Spinach Cream Sauce
Serves 1

1 rasher of bacon, sliced
1/4 tsp garlic, minced
1/3 cup light cream or creme fraiche
A large handful of spinach leaves
1 tbsp grated parmesan cheese
Black pepper for seasoning

Heat water on the stove and when boiling, throw in gnocchi to heat up. The gnocchi is ready when they start to float.
Meanwhile, saute bacon in a pot until golden and sit aside. Add garlic and spinach to pot and stir until leaves have wilted. Pour cream over the top and mix to combine. Using a hand held blender, whiz up the sauce until no large leaves of spinach are left, before putting the bacon back in. Add the parmesan cheese and season with black pepper and give a quick stir. Throw in your cooked gnocchi and mix till well covered in sauce and serve.

The bacon added enough salt for my taste, but if you feel it needs a little more add some in. Also, pine nuts would be delicious with this meal, if you’re wanting to make it a little more fancy.
