Sweet Potato Scones

There’s a whole lot you can do with a couple of sweet potatoes, why not make scones? These babies are both tasty and nutritious!

Sweet Potato Scones
Makes approximately 18

1 1/2 cups plain flour
1/2 cup oats
1 tbsp baking powder
1/4 tsp salt
1/2 tsp cinnamon
1 cup sweet potato, cooked and mashed
1/4 cup milk
1/2 tsp vanilla essence
1 egg, lightly beaten
1/4 cup coconut oil
2 tbsp sugar or 1/3 cup honey (plus extra honey for brushing)

Preheat oven to 200ºC (fan forced). In a small bowl mix the plain flour, oats, baking powder, salt and cinnamon. In a separate bowl stir together the mashed sweet potato, milk, vanilla essence, egg, oil and sugar. Add the dry ingredients to the wet and mix until properly combined. Turn out dough on a clean work surface powdered with flour. Roll out with a rolling pin or just pat down with hands till dough is approximately 2cm thick. Using a cookie cutter, cut out circles and place on a tray lined with baking paper about 2.5cm apart. Bake in the oven for 15-20mins, until scones are golden brown. Heat about a tablespoon of honey in a microwave for 15seconds. Remove scones from the oven and brush over with honey. Slice in half and spread with Strawberry Chia Jam.
