Apple and Cranberry Bircher Muesli

Right now all of my days are packed to the brim full of high-priority tasks like going to work and exam revision. As a result, I’m pretty sleep deprived and I can barely wake up with enough time to dress in anything other than a hoodie and gym shorts, let alone eat a decent meal. It is also well known that skipping breakfast is a common habit among students (or anyone who has to get up early) who would much prefer to get that extra half our of Z’s than have a nutritious breakfast.

In saying this, I decided that a meal I could prepare earlier that required minimal effort in the morning was the way to go.

Apple and Cranberry Bircher Muesli
Serves 4

2 cups rolled oats or quick oats
1/2 cup apple juice
1/4 light milk
1 cup natural yoghurt
Handful of almonds, chopped
Handful of hazelnuts, chopped
Dried cranberries
2 medium granny smith apples, grated
1 tsp honey

In a bowl combine all ingredients. Gladwrap or transfer into a jar, place in the fridge and serve when you’re groggy, grumpy and short for time.
If you’re using quick oats, the bircher will be ready to serve straight away, but rolled oats will need at least a couple of hours in the fridge for the liquids to soak in.

I used store-bought apple juice, but feel free to juice your own granny smith apples. If you prefer your muesli less sweet, omit the honey and use less apple juice and more milk and yoghurt. This recipe also works well with other non-dairy milks.
