Sunday Morning Pancakes

Are you a full time student with a part time/casual job? Do you have almost no time to yourself? Do you forget how blissful Sunday mornings were when you had them off?


These pancakes turn any freezing, rainy Wednesday into a pretend Sunday.

Sunday Morning Pancakes
Serves 1

2 medium bananas
2 eggs
1/2 cup wholemeal flour
1 tsp coconut oil
2 tbsp milk
Fruit and honey to serve

Mash bananas up and whisk eggs lightly in a separate bowl. Mix together banana, flour, eggs, coconut oil and milk (I used a hand held blender to whiz out the lumps in the mixture, but it’s not necessary). Heat a little more coconut oil in a fry pan and ladle in batter at desired amount. Cook till golden brown on each side. Stack up pancakes, throw on your choice of sliced fruit and drizzle with honey.


Some of the ingredients can be switched depending on what you have available.
Wholemeal flour – plain white flour, buckwheat flour, any kind of fancy flour
Coconut oil – vegetable oil (or omit the oil from the batter entirely)
Milk – almond milk, soy milk, rice milk…

I topped my pancakes with sliced strawberries, kiwifruit and shredded coconut, but any kind of fruit will do. You could also thrown on crushed nuts or choc chips as well. Honey or maple syrup is well suited to these pancakes but another option is a chocolate peanut butter sauce.

Chocolate Peanut Butter Sauce

2 tbsp peanut butter (smooth or crunchy)
1 tsp cocoa powder

Heat the peanut butter in the microwave, stirring frequently until you reach a smooth sauce texture. Stir in cocoa powder thoroughly.
