Peanut Butter Banana Ice-cream

Kind of ironic that the weather hits an all time low and in the midst of constantly boiling the kettle, wearing bed socks and chasing my cat around with a miniature red hoodie, I decide I’ve reached the stage in my life where it’s time to blend up frozen bananas.

My mother (and every other food blogger) has had a go at making this infamous one ingredient banana ice-cream. Magical? Yes. Creative? Hardly. Anything can be improved with a dollop of peanut butter right? I just self high-fived myself.

Peanut Butter Banana Ice-cream
Serves 2

3 medium sized bananas, peeled, chopped into coins and frozen
3 tbsp peanut butter (or to taste)
1 tbsp honey
1 tsp rock salt

Blend frozen bananas in a food processor till smooth and creamy (bananas will go from frozen chunks to crumbs then smooth, just takes a bit of time). Add peanut butter and honey and blend to combine. Add rock salt and whiz again.

Serving suggestion as per my housemate: 3 scoops, drizzled in a generous load of chocolate ice magic and sprinkled with buckwheat. Happy eating.
