Choc Chip Peanut Granola

When boys have breakfast it has to be something substantial and often fried. Like eggs and bacon. Name a boy who doesn’t enjoy eggs and bacon. Actually, name anyone who doesn’t like bacon. Once I read a recipe by a vegan chef trying to replicate the taste and texture of bacon by using king mushrooms. Even people who don’t like meat like bacon.

Anyway, have you heard about granola? It’s all the rage right now; a new breakfast trend kinda like cereal, kinda like muesli. It’s versatile and tasty and really simple to make. I fed this granola with milk to a boy this morning, pre-warning him that it was no bacon and eggs, but still quite nice to have for breakfast. With fingers crossed and no expectations he told me he really liked it! So there you go, Choc Chip Peanut Granola is boy friendly; a perfect reason to cook up a batch to feed to him…and keep all the bacon to yourself.

Choc Chip Peanut Granola
Serves 4

2 cups rolled oats
1/2 cup quinoa
1/4 cup peanut butter (I used the smooth variety)
1/4 cup maple syrup
1/4 cup apple sauce
1/2 tbsp cocoa powder
1 tbsp coconut oil
1/4 cup flaked almonds
1/4 cup dark chocolate chips

Preheat oven to 180°C. In a saucepan heat peanut butter, maple syrup, apple sauce and coconut oil till smooth and blended. While that’s heating, combine rolled oats, quinoa, cocoa powder and flaked almonds in a separate bowl (I crumbled the flaked almonds a bit before adding them, just so I didn’t get big pieces in my granola, but it’s all personal preference). Pour wet ingredients into dry and mix together. On a oven tray lined with baking paper, spread mixture out evenly and bake for 35 minutes. Check granola every 10 minutes or so and move around with a fork to prevent burning. When finished cooking, allow to cool completely before adding the chocolate chips and mix through. Enjoy with milk or yoghurt or on its own.
