Coco loco

I bought coconut oil a few days ago after reading about its health and beauty benefits. I like the smell and taste of coconut, it reminds me of summer weather that’s hot but not too hot, brown skin and really clear blue water. Somehow coconuts instantly transport you to some pseudo tropical island you’ve imagined in your head, and you quickly feel less like a shift working food and beverage attendant and more like Adriana Lima in a Victoria Secret campaign.

Anyway, with that in mind and wallet in hand, I bought a jar of organic coconut oil from my health food store and took it home to try.


Used as a oil base in many of our favorite foods, coconut adds a delicious and refreshing flavor element, especially to sweet foods like pancakes and oats.

1 cup oats
1 banana
1 egg
1 cup almond milk
1/4 cup chia seeds
1 tbsp coconut oil

Blend together first 5 ingredients to a suitable consistency. Heat pan, pour in a little coconut oil and a generous dollop of mixture. Cook till golden on each side.

We topped the pancakes with blueberries and maple syrup, but it’s all personal preference. They were delicious.

1 cup oats
2 tbsp chia seeds
2 cups water
2 ginger teabags
1 tbsp coconut oil

Infuse teabags in boiling water (add more teabags for stronger flavour) or warm water in the microwave. add oats and chia seeds and microwave for further 2 minutes stirring occasionally. When oats have soaked in ginger water stir through coconut oil.
